A good planner will check the wind forecast as carefully as the rain forecast, knowing that a dinner set on a cliff might need to be moved to a protected courtyard if the Scirocco starts to blow.

In the US, wedding food is often something people “get through” so they can start dancing. In Puglia, the food is the event. A traditional wedding banquet can last for hours, and it is a point of pride for the families involved.   

It usually starts with the Gran Buffet di Antipasti. This isn’t just a few crackers and cheese; it’s a sprawling village of food. There are stations for fried vegetables (pettole), stations for local cured meats (capocollo di Martina Franca), and, most importantly, the “casaro” making fresh burrata and mozzarella right in front of you.   

As a photographer, this is one of my favorite times to capture candid moments. Guests relax, the food looks appealing, and the atmosphere feels electric. I often suggest to couples that they shorten the formal seated part of the dinner to perhaps two courses so they can enjoy more time in this “aperitivo” phase where people move around and mingle.

Puglia is beautiful year-round, but the experience changes significantly with the seasons.   

• The Winter Wedding: While less common for destination weddings, a winter wedding in Puglia can be magical. Imagine a cozy dinner in a masseria’s fireplace room, with the white stone outside contrasting with the warmth of the fire. Places like Castello Monaci are perfect for these “fairytale winter” events.   
• May and June: The region is green and lush. The wildflowers are in bloom, and the temperatures are perfect—warm during the day and cool at night. The light is soft and romantic.   
• July and August: This is the height of summer. It’s hot, vibrant, and full of energy. This is the time for beach parties and dinners under the stars. The light is intense, requiring a photographer who knows how to manage high-contrast situations.   
• September and October: This is my personal favorite. The crowds have thinned out, the light becomes a rich, deep gold, and the harvest season brings a special feeling to the air. It’s a time of abundance and warmth.   

The Photographer’s Perspective on “The Schedule”

One of the biggest mistakes couples make is trying to cram too much into the day. They see a “timeline” online and think they have to follow it. But in Puglia, time should be fluid.

I always recommend building in “buffer” time. If the hair and makeup takes thirty minutes longer than expected, it shouldn’t ruin your day. If the ceremony is so emotional that everyone needs a few minutes to hug and cry afterward, we should have time for that.

My ideal schedule for a summer wedding looks something like this:

• Dinner (Twilight/Night): Under the fairy lights, with the stone walls illuminated.   
• Preparation (Late Afternoon): Using the natural light in the masseria’s suites.   
• Ceremony (Approx. 2 hours before sunset): This ensures the light is soft and the temperatures are dropping.   
• Aperitivo (Sunset): The guests enjoy the golden hour while we take twenty minutes for some relaxed portraits.
